Blueberry Lavender Fizz

Ingredients
- 1 cupfresh or frozen blueberries
- 0.3 cupwater
- 0.3 tspdried culinary lavender buds (food-grade)
- 1lemon, juiced
- 2 tspraw honey (optional, to taste)
- 0.3 tspfine sea salt
- 2 cupssparkling water, well chilled
- 2 cupsice cubes
- 0.3 cupfresh blueberries, for garnish

Method
Crush the blueberries
In a small saucepan over medium heat, warm the blueberries with the water, mashing with a fork or muddler as they soften, until the berries burst and release a deep purple juice.
Steep the lavender
Pull the pan off the heat, stir in the culinary lavender buds, and let it steep gently. Off-heat is the whole trick — it pulls floral aroma without the bitterness that boiling lavender creates.
Strain
Pour through a fine-mesh sieve into a jar, pressing the solids to extract all the juice. Discard the pulp and lavender for a smooth, clean base.
Season and chill
While the base is still warm, whisk in the lemon juice, raw honey, and sea salt until the honey dissolves. Taste and adjust, then chill until cold.
Build the fizz
Fill two tall glasses with ice, divide the blueberry-lavender base between them, top with the chilled sparkling water, and stir once gently. Finish with fresh blueberries and a lemon twist.

Whole blueberries, gently crushed, give you the color and the anthocyanins — the same pigments studied as dietary antioxidants. Bottled berry sodas give you neither.
