Water Kefir (Basics)

Milder, dairy-free, and fizzy. A gateway to home fermentation.

⏱15 minMedium💧 Forgetful Hydrator

Ingredients

  • Water kefir grains3 tbsp
  • Filtered water1 L
  • Cane sugar¼ cup
  • Dried fruit2 figs or raisins

How to sip

Dissolve sugar in a little warm water, then top with cold water.

Add grains and dried fruit. Cover loosely with cloth; rest 24–48 hours on the counter.

Strain; refrigerate. Second-ferment with fruit for fizz.
